Ingredients
3 tablespoons butter
1 medium onion, chopped
4 cups chopped zucchini
1 cup water
1 10-ounce can cream of chicken soup
1 cup half and half
1 teaspoon dried basil
salt and black pepper
Directions

- Sauté chopped onion in butter for 3-4 minutes in a dutch oven over medium heat.
- Add sliced zucchini and water to the large stock pot and simmer for 30 minutes.
- Remove from heat and cool slightly. Blend in a blender until pureed. Return to the soup pot.
- Add the remaining ingredients to the large pot and heat to simmering.
- Serve hot.
