Ingredients

3 tablespoons butter

1 medium onion, chopped

4 cups chopped zucchini

1 cup water

1 10-ounce can cream of chicken soup

1 cup half and half

1 teaspoon dried basil

salt and black pepper

Directions

  1. Sauté chopped onion in butter for 3-4 minutes in a Dutch oven over medium heat.
  2. Add sliced zucchini and water to the large stock pot and simmer for 30 minutes.
  3. Remove from heat and cool slightly. Blend in a blender until pureed. Return to the soup pot.
  4. Add the remaining ingredients to the large pot and heat to simmering.
  5. Serve hot.
