- Great Northern Beans – Brings a creamy texture and mild, buttery flavor to the white chicken chili.
- Chicken Broth – Forms the flavorful foundation of creamy white chicken chili.
- Green Chiles – Adds a mild heat to the chili, giving the dish a subtle kick.

Ingredients
1 pound rotisserie chicken, shredded
1 medium chopped onion
1 1/2 teaspoon garlic powder
1 tablespoon olive oil
2 cans (15-ounce sized) Great Northern Beans, drained and rinsed
14 1/2 ounces chicken broth
2 cans chopped green chiles (4-ounce)
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup sour cream
1/2 cup heavy whipping cream
Shredded jalapeno monterey jack cheese, cheddar cheese, tortilla chips, and sliced seeded jalapeño pepper are all optional toppings

Directions
- In a large saucepan, sauté the onion and garlic powder with the olive oil over medium heat until the onions are translucent.
- Add the shredded chicken, beans, chicken stock, chiles, and seasonings to the large pot. Bring to a boil. Reduce heat to simmer and cook for another 30 minutes uncovered.
- Remove from heat. Stir in sour cream and heavy cream. If desired, top with shredded cheese, tortilla chips, green onions, dollop of sour cream, lime wedges, or sliced jalapeño peppers.

Tips
- You can substitute hatch chiles for green chiles. Just add the hatch chiles to the onions when you sauté them.
- White beans, navy beans, pinto beans, or cannellini beans can replace Great Northern beans.
- Omit the cayenne pepper if you prefer a milder chili. You can always add the cayenne pepper at the end.
- Substitute a cooked chicken breast or leftover chicken for rotisserie chicken.
- If you’re looking for exciting ways to top your soup, look at Best Soup Topping Ideas.
- You can substitute garlic powder for minced garlic cloves.
- To make this white chili thicker, add some cream cheese.
- I like to squeeze fresh lime juice on my creamy chicken chili.
- You can substitute vegetable broth for chicken stock.
Topping Ideas
- Shredded cheese
- Jalapeño slices
- Pickled Jalapeños
- Crunchy Tortilla chips
- Tortilla strips
- Green onions
- Fresh Cilantro
- Dollop of Sour cream
- Hot sauce
- Limes
- Chopped poblano peppers
- Salsa verde
- Chili powder
- Green chilies
- Red onion
- Fresh avocado
- Chopped red bell pepper
What goes well with white chili?
- You’ll want to sop up all that goodness with some rolls.
- Cornbread also goes well with white chicken chili.
- A nice side salad is also the perfect accompaniment to this dish.
Can you make the chili thicker?
Yes, you can make the creamy white chicken chili thicker. Blend one of the drained, rinsed cans of beans before adding to the chili.
Storage
Properly stored in an airtight container, white chili with chicken will last 3-4 days in the refrigerator.
Soups with dairy don’t freeze well. When you reheat the soup, the dairy separates and tastes grainy. I wouldn’t recommend it unless freezing the chili before adding the sour cream and heavy cream.
How to Make Recipe in the Slow Cooker
- Cook the onions and garlic powder in the olive oil in a saucepan over medium-high heat for a few minutes. Add to the crockpot.
- Add the rest of the ingredients to the slow cooker, except for sour cream, heavy cream, and toppings.
- Slow cook the white chili chicken on low for 5 hours or high for 3 hours.
- Stir in sour cream and heavy cream. Ladle the white bean chili recipe into bowls and add your favorite toppings. Crockpot white chicken chili will become a family favorite.

How do I thicken white chicken chili?
There are various methods that thicken white bean chicken chili. One common way is to mash some of the beans with a fork or blend some chili with an immersion blender to create a thicker consistency. Additionally, you can mix a small amount of cornstarch with water and stir it into the chili to thicken it.
Is white chicken chili spicy?
You can adjust the level of spiciness in white bean chili according to personal preference. If you prefer a milder chili, you can reduce the amount of green chilies. Conversely, if you like spicy food, add chilies or even some cayenne pepper for extra heat. Adjusting the amount of spices like cumin can also control the overall spiciness.

Thank you for the recipe, my family loved it! Will definitely make again. I appreciate the crockpot version included, as well as the sides and toppings suggestions. Delicious and simple!
Looking forward to trying more recipes.
Hello! You are very welcome. I’m so glad you liked it! Try my Hungarian Mushroom soup, meatloaf, and pickled red onions. Those recipes are 10’s! Kelly
This was really good! I ended up using a whole 32 oz box of chicken bone broth, and added more chicken for extra protein, but kept the measurements for everything else the same, and the flavor is outstanding. I used 505 brand hatch Chiles, and I wish I had taken into consideration cooking them with the onion like you recommended in your notes. I will definitely do that next time.
Thank you for the compliment! I appreciate you writing to let me know – Kelly
This soup is delicious! What a quick, easy and tasty recipe. Thank you for sharing it .

@Barbara,
Was only a 14.5 oz. can of broth and 1/2 c. whipping cream really enough liquid? It doesn’t seem like much. Thanks for replying.
Jami
Hello Jami! Yes, it’s enough. You can always add more if you want your chili to be less thick. Let me know how you like it. – Kelly
I finally have the chicken chili recipe my sister ran off with and did not return!!!😢 Thank you.
Yay! I’m so glad you loved the recipe. Thank you for letting me know. – Kelly
The recipe ends with “remove from heat”. When are the sour cream and whipping cream added?
Thank you so MUCH for writing in Maggie. The instructions were complete on the post, but not the recipe card. I changed it. Thank you again! – Kelly
Delicious. My husband gives it two thumbs up. Me too.
Hello Karen! I’m so glad you loved the recipe. Thank you for letting me know! – Kelly
@Kelly, Do you think substituting the sour cream for plain Greek yogurt would turn out the same?
It might be a little bit different – but the main flavor will still be the same. – Kelly
How is one can (14.5 oz) enough liquid? Am I missing something?
Hi Megan! It’s definitely enough. It has a chili consistency. – Kelly
This was exceptional! Thank you for sharing!
You’re very welcome Carey! I appreciate the feedback. – Kelly

I’ve been making this chili for about 20 years from the Taste of Home recipe. It is hands down the BEST white chicken chili around! I gave a friend of mine the recipe and she WON a chili cook-off with it.
Yay! I’m so happy you love the recipe. Thank you for letting me know. – Kelly
@Laurie Ireland, I was about to post the exact same thing .. I used to spend hours going through my mom’s Taste of Home magazines! And I have have won my office’s chili spin-off twice with this recipe 😉
Really good. I like to make it with milk and puree one can of beans to make it thicker and creamier without the added fat.
I’m so glad you liked the recipe! I appreciate you letting me know. – Kelly
Guess I’ll have to start doubling this…my husband ate it all last time except for my normal sized serving. We love it and I couldn’t be happier that it’s so easy!!! Many thanks!!!
You are very welcome Lani! I’m so happy you loved it. – Kelly
I made this for the first time tonight. I doubled the broth and decided to add cilantro lime chicken breasts that I shredded. It was amazing!
I’m so glad you loved the recipe! Thank you so much for letting me know. – Kelly
This was delicious, nice kick with the green chilies. My only regret is that I didn’t double the recipe.
Yay! I’m so glad you liked the recipe. I appreciate you letting me know. – Kelly
It was the coldest day of the year so far here in southern Kentucky yesterday so we needed a pot of soup. I’ve been trying to make soups without a recipe lately thinking aah I know how to make soup. As a result, my soups have been more misses than hits. I knew I had everything for White Chicken Chili, so I went hunting and found you. So glad I did! This is the real deal right here. I poached and shredded a pound of chicken breast and used 3 cups of the broth off of that. Cannellini beans happened to be what I had on hand. My hubs and I both loved this soup!! I served it with a corn pudding and I wanted to top it off with your lemon bars but I ran out of energy. I’ll make those tonight with the leftovers. Lemon bars on a cold, dreary winter day – perfect. Doesn’t that sound like a wonderful menu? Great recipe, thanks!
Yes! This recipe is so good – it’s the perfect one for a cold day. Try my caramelized onion soup too. – Kelly
This was delicious!!! I added a bit more salt and 2 cans of broth. One just didn’t seem like enough.
I’m so glad you loved the recipe Vicki! I appreciate you letting me know. – Kelly
I decided to give this recipe a try and I was actually amazed. I am very picky when it comes to chili but this one is very good. I did cook my own chicken instead of using rotisserie, I used fresh jalapeños in stead of canned, those were my preference, otherwise nice recipe!!
Hello Buddie! I’m so glad you loved the recipe. You’re going to want to try my Hungarian Mushroom Soup recipe and my Caramelized Cream of Onion Soup too! They are both amazing. – Kelly
Made it for church luncheon and was a “hit”.
That’s quite the compliment! Thank you so much for letting me know. My creamy grape salad is also a hit at potlucks. – Kelly
Delicious! In steady rotation!
I’m so glad you loved the recipe Lisa! I appreciate you letting me know. – Kelly
This is very good. I did chop up 2 jalapeños, seeds removed)and sautéed them with the onions.
Otherwise, I stuck to the recipe.
I love adding jalapeños too! So darn good. – Kelly
This was delicious! I followed your recipe exactly and was a tad worried, thinking there might not be enough liquid to get it through. But it magically transformed during the simmer and was a beautiful consistency at the end! I’m glad I didn’t change anything. It’s perfect, as is! 👌
Yay! I’m so glad you loved the recipe Kim. I appreciate you letting me know. Try my Hungarian Mushroom Soup next. – Kelly
My husband loves chili and I love how easy this is to make. I buy the rotisserie chicken from Costco that has already been picked off the bone. I also use a full 32oz box of chicken broth. So yummy!!
Hello Carla! I’m so glad you loved the chili recipe. Try my turkey chili recipe too. It’s also delicious. – Kelly
I was wondering how big a serving size is? My husband is on a diet that requires us to count his sodium intake, so I just am wondering the portion size so we calculate it correctly 😊
Could I use ground chicken instead?
Yes you can Cindy. You just have to make sure to cook it first and drain any grease. – Kelly
Often, recipes that include “best” in their title don’t live up to expectations. This one EXCEEDED them! I’ve been making White Chicken Chili for years, but this version will be my only version! It’s got so much flavor and it comes together so easily.
Wow! What a compliment! Thank you so much for letting me know. I really appreciate it. – Kelly
Great recipe! It took first place at our church’s chilli cook off.
Yay! I’m so glad you won! I appreciate you letting me know. – Kelly
Perfect timing for me. This recipe looks to be the best and I have most of the ingredients I can grab a chicken from the grocery store and some sour cream. Otherwise dinner tonight is going to be spectacular. Thank you so much.

Would adding corn work with this? I was thinking a 1/2 cup to cup of frozen corn kernels to add some veggie….
Yes, adding corn would be fine.
