Ingredients for White Chili with Chicken
1 pound rotisserie chicken, shredded
1 medium chopped onion
1 1/2 teaspoon garlic powder
1 tablespoon olive oil
2 cans (15-ounce sized) Great Northern Beans, drained and rinsed
14 1/2 ounces chicken broth
2 cans chopped green chiles (4-ounce)
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup sour cream
1/2 cup heavy whipping cream
Shredded jalapeno monterey jack cheese, cheddar cheese, tortilla chips, and sliced seeded jalapeño pepper are all optional toppings
How do you make white chicken chili from scratch?
- In a large saucepan, sauté the onion and garlic powder with the canola oil over medium heat until the onions are translucent.
- Add the shredded chicken, beans, chicken stock, chiles, and seasonings to the large pot. Bring to a boil. Reduce heat to simmer and cook for another 30 minutes uncovered.
- Remove from heat. Stir in sour cream and heavy cream. If desired, top with shredded cheese, tortilla chips, green onions, lime wedges, or sliced jalapeño peppers if desired.

This was really good! I ended up using a whole 32 oz box of chicken bone broth, and added more chicken for extra protein, but kept the measurements for everything else the same, and the flavor is outstanding. I used 505 brand hatch Chiles, and I wish I had taken into consideration cooking them with the onion like you recommended in your notes. I will definitely do that next time.
