That’s how obsessed I am. I played with the recipe until this combination made the grade. I could eat these cauliflower steaks every day.
You can make this recipe as a side dish or main dish. It’s one of those healthy cauliflower recipes everyone will love.

Now the key to making this recipe perfect for you and your family is to doctor each cauliflower steak to your liking.
For instance, I love A LOT of red pepper flakes. I put the flakes initially, adding a few to mix with the cheese.
The great thing about this recipe, each cauliflower steak can be made based on who will be eating it. Maybe your kids don’t like anything spicy – no problem – leave the red flakes off one steak.
Are you not a big fan of lemon? Use less or not at all. I use between one to 1 1/2 lemons, depending on how big of cauliflower I’m roasting.

Ingredient List for Roasted Cauliflower Slices
1 large cauliflower head, sliced lengthwise with a sharp knife (You will get 3-4 thick slices – depending how large the head of cauliflower is.)
1/4 cup good-quality olive oil
1/2 – 1 lemon, juiced (depending how much you like lemon – I would start off with the 1/2 lemon and see what flavor you like!)
2 cloves of garlic, minced
pinch of red pepper flakes, (or more depending on your taste)
salt and freshly ground black pepper to taste
one tablespoon of butter per steak (usually three)
1/4 cup parmesan cheese
Directions for Making Parmesan Cauliflower Steaks
Heat the oven to 400 degrees.
Line a baking sheet with parchment paper and place the steaks in a single layer on the baking sheet.
Mix together the lemon juice, olive oil, and minced garlic in a small bowl.
Brush the olive oil mixture on each steak. Season with salt and pepper.
Sprinkle red pepper flakes on each slice of cauliflower, to taste.
Cook steaks at 400 degrees for 15-20 minutes. Take out of the oven and flip each steak over and brush on the oil mixture to the other side.
Bake cauliflower for another 15-20 minutes until cauliflower is tender and edges are browned and is fork tender. Take out of the oven and place on pad of butter on each steak and sprinkle top with parmesan cheese.
Bake for another 5 minutes.
Place on a serving platter with lemon wedges. Dive in!
Tips for Making Roasted Cauliflower Steak
- You can substitute garlic powder for minced garlic.
- Make sure you choose large cauliflower heads for thick cauliflower slices. The small ones will crumble.
- Discard the bottom stem and outer leaves.
- You can use the broken florets to make cauliflower rice in a food processor or add them to your baking tray. Or add them to a large skillet and sauté the loose florets with olive oil and butter for children.
- There’s so many ways to top these cauliflower steaks to your liking. Add Italian seasoning, pine nuts, marinara sauce, or other flavored cheese to this recipe.
- Serve these parmesan cauliflower steaks with a side salad for a complete meal.
- You can substitute cayenne pepper for red pepper flakes.
- To make this recipe vegan, make vegan cheese and vegan butter.
How long do leftover cauliflower steaks last in the fridge?
When properly stored in an airtight container, parmesan cauliflower steaks will last 3-4 days.

Ok. I was skeptical, but seriously, these were amazing. So much so, I raved to my brother who is currently living in India. He loves his red meat, but that is not possible there. He is very interested in trying this. He is pretty sure he can get everything except red pepper flakes and Parmesan, is there something else that might work for him?

So delicious!!! We loved it just as written. I did put red pepper on both sides though and it was quite spicy! I did 2 heads and all but 3 slices fell apart but I cooked them anyway and they were good. How do you get the slices to stay together? Is there a trick? :)
