Parmesan Cauliflower Steaks

I’ll confess, every time I bought cauliflower before – I usually ended up not using it in time and my money went in the trash – literally.  

Well, that has all changed.  Now, I’m obsessed with cauliflower.  Before the big snowstorm hit our area , I went to THREE grocery stores to make sure I had enough to make these steaks.  

That’s how obsessed I am.  I played with the recipe, until this combination made the grade.  I could eat this every day.

My friends are going to be so happy to see this post.  Everyone is so sick and tired of hearing me go on and on about this recipe.  (I have refused to give it out, until it reached “perfection!”) 

Well, it’s finally here.  The perfect recipe.  (Bold statement, I know – but I also say that about my Best Meatloaf Recipe Ever and you can read the reviews for yourself! That recipe is so good, my sister passed it off as her own until while on vacation, the truth came out.  My brother-in-law has never recovered from the betrayal.) 

Bonus:  This recipe is actually SUPER GOOD for you too!  How is that even possible?  

Now the key to making this recipe perfect for you and your family is to doctor each steak to your liking.  

For instance, I love A LOT of red pepper flakes.  I put the flakes on in the beginning and I add a few to mix with the cheese too.  

The great thing about these recipe, each cauliflower steak can be made based on who will be eating it.  Maybe your kids don’t like anything spicy – no problem – leave the flakes off one steak.  

Are you not a big fan of lemon?  Use less, or not at all.  I use between one full lemon to 1 1/2 lemons, depending how big of cauliflower I’m roasting.  

Here’s the Parmesan Cauliflower Steaks Recipe:  

1 large cauliflower head, sliced lengthwise.  (You will get 3-4 “steaks” – depending how large the head is) 

1/4 cup good-quality olive oil 

1/2 – 1 lemon, juiced (depending how much you like lemon – I would start off with the 1/2 lemon and see what flavor you like!) 

2 cloves of garlic, minced 

pinch of red pepper flakes, (or more depending on your taste) 

salt and pepper to taste

one tablespoon of butter per steak (usually three) 

1/4 cup parmesan cheese

Heat the oven to 400 degrees.  

Line a baking sheet with parchment paper and place the steaks on the baking sheet.  

Mix together the lemon juice, olive oil, and minced garlic in a small bowl.  

Brush the olive oil mixture on each steak.  Season with salt and pepper.  

Sprinkle red pepper flakes on each slice of cauliflower, to taste.  

Cook steaks at 400 degrees for 15-20 minutes.  Take out of the oven and flip each steak over and brush on the oil mixture to the other side.  

Bake cauliflower for another 15-20 minutes until cauliflower is tender and edges are browned. Take out of the oven and place on pad of butter on each steak and sprinkle top with parmesan cheese.  

Bake for another 5 minutes.  

Dive in!

Parmesan Cauliflower Steaks

Prep Time 10 minutes
Cook Time 45 minutes
Total Time 55 minutes

Ingredients

Ok. I was skeptical, but seriously, these were amazing. So much so, I raved to my brother who is currently living in India. He loves his red meat, but that is not possible there. He is very interested in trying this. He is pretty sure he can get everything except red pepper flakes and Parmesan, is there something else that might work for him?

So delicious!!! We loved it just as written. I did put red pepper on both sides though and it was quite spicy! I did 2 heads and all but 3 slices fell apart but I cooked them anyway and they were good. How do you get the slices to stay together? Is there a trick? :)
