Buttermilk waffles are classic comfort food. It’s the perfect recipe that is both versatile and delicious. As a bonus, even kids don’t have to be told twice to eat their waffles.

  • All-purpose flour – Provides the structure and body for the waffles, creating a sturdy yet tender base that holds the crisp exterior and fluffy interior.
  • Salt – Balances the sweetness and enhances the overall flavor, making the waffles taste more complex and satisfying.
  • Baking soda – Works in tandem with the acidity of the buttermilk to produce additional life and tenderness while enhancing browning.
  • Eggs – Contribute richness, structure, and stability, while the yolks add tenderness and the whites help create a light texture.
  • Buttermilk – The acidity reacts with the baking soda for lift, while its fat content adds moisture and a slight tang that deepens flavor.

Ingredients

2 cups unbleached all-purpose flour, sifted 

1 teaspoon salt 

1/2 teaspoon baking soda 

2 eggs, separated

1 3/4 cups buttermilk 

4 tablespoons melted unsalted butter (slightly cooled) 

Butter and maple syrup for serving

Directions

  1. Preheat your waffle iron. 
  2. Sift the baking soda, salt, and flour together in a medium bowl. 
  3. Beat the egg yolks together in a large bowl. Add in buttermilk and beat together.  
  4. Add the flour mixture to the wet ingredients mixture, and mix only to blend. Do NOT overmix! 
  5. Stir in the melted butter to the mixture.  
  6. In a separate bowl, beat the egg whites until stiff (not dry). Fold egg whites in waffle mixture and mix – but do not blend completely.  
  7. Follow the manufacturer’s instructions for cooking waffles from your waffle iron. Spoon a cup of batter on a hot waffle iron. Add more batter as needed. Cook the waffles until they are a golden brown color on the outside and soft on the inside.  
  8. Serve the buttermilk waffles with butter and maple syrup.  

Tips for Making Waffles

  • Experiment with different temperatures on your waffle iron to get the best waffles. You want the right amount of crispiness on the outside without drying out the waffles. 
  • Using buttermilk, you will find your waffles are a perfect mix of fluffy on the inside and crispy on the outside.  
  • To save time in the morning, you can mix your dry ingredients the night before and store them in a covered container.
  • If you want crispy waffles, refrigerate your waffle batter for 2-3 hours before using. It will cool and thicken. Once this batter is chilled, please don’t add more water or bring it to room temperature. Set your waffle iron to “hot” and cook according to your waffle maker’s instructions.  
  • Peanut butter is my secret ingredient to add more flavor to my favorite waffles.
  • Place waffles in a single layer on a wire rack to cool down before freezing.
  • If you’re out of buttermilk, you can make your own. For every one cup of regular milk, add a tablespoon of lemon juice or vinegar.
  • You can substitute whole wheat flour with all-purpose flour.
  • I also like to add a little vanilla extract to the batter for a fun change.
  • Add fresh berries to your batter, like raspberries, strawberries, and blueberries.
  • Store cooked waffles in a warm oven until serving time.

Storage

You can freeze leftover waffles. They will last for three months in the freezer when stored correctly in an airtight container or bag.  If you’re storing your waffles in a freezer bag, release as much air as possible before freezing.

1) Pair your favorite fried chicken recipe with your buttermilk waffles and top with maple syrup for a sweet and salty taste explosion.
