Fajita Seasoning vs Taco Seasoning
Fajita seasoning and taco seasoning are similar spice blends, but they have distinct flavor profiles. Fajita seasoning typically has a smokier flavor, often featuring more cumin and less chili powder than taco seasoning.
Taco seasoning tends to be bolder and spicier, with a stronger emphasis on paprika, chili powder, and sometimes even tomato powder. While both are savory and versatile, fajita seasoning is milder and better suited for grilled meats and vegetables, whereas taco seasoning delivers a punchier flavor, ideal for ground meats and classic taco fillings.
Ingredients to Gather
- Cornstarch – helps thicken the juices released during cooking, creating a light coating that clings to the meat and vegetables.
- Chili Powder – adds a warm, earthy flavor and mild heat, giving fajitas their signature smoky depth.
- Salt – enhances the flavor of the spices while bringing out the natural taste of the meat and vegetables.
- Paprika – adds mild sweetness, subtle smokiness, and a beautiful reddish color to the seasoning.
- Sugar – balances the spices with a touch of sweetness and helps caramelize the meat and vegetables as they cook.
- Onion Powder – adds savory depth and a hint of sweetness that enhances the overall flavor of the seasoning.
- Garlic Powder – adds bold, savory flavor that pairs perfectly with the other spices.
- Cayenne Pepper – adds a spicy kick and lets you adjust the heat level to your taste.
- Cumin – adds warm, earthy notes with a hint of nuttiness and smokiness that give fajita seasoning its classic Southwestern flavor.

What steak do you use for fajitas?
Skirt steak and flank steak are the best cuts for fajitas because they become tender and flavorful when cooked quickly over high heat. For the most tender bites, avoid overcooking the meat and always slice it thinly against the grain before serving.

This was the first time I ever made any seasoning mix. I mean, I’ve seasoned things before, but never things I usually things I buy the packets for. (Meatloaf, tacos, fajitas, etc.). I have been trying to be more aware of the food I feed my family, and those packets have all kinds of foreign ingredients in them! I made fajita seasoning tonight, and it turned out better than the packets! Thank you for opening my eyes up to a new way of seasoning! (And saving money never hurt)!
Hello Angie! I’m so glad you loved the seasoning. Can you believe how easy it is? Thanks for letting me know. Kelly
Can you double this recipe and if so, how long can you store it for?
Hello Michele! You can double the recipe. Most spices start losing their flavor in a year. Thanks, Kelly
To make the homemade seasonings for steak and shrimp fajitas. I have all of the ingredients except for the ground cumin. Will my fajitas still be tasty without the ground cumin? Ty
So sorry about the delayed response – I’ve been moving across the country. Yes, it will still be good without the cumin. Kelly
I’m sorry if you have this in your post, but I must have missed it…
How much of this mix do you use per pound of chicken? Or what would the equivalent be to the amount in the store bought packages?
Thank you so very much

@Kelly, Use all of the mix for 2-3 pounds of meat????
Hello Jean! Yes, remember you’ll be tossing it with vegetables too. A fajita packet of seasoning is about the same amount. Kelly

I’m so glad you liked the recipe Donny! Thank you for letting me know. Kelly
I’m just curious as to why there is corn starch in this seasoning mix?!
Hello JR! It helps the seasoning mix cling to the meat. You can leave it out if you wish. Kelly
My husband and I used this fajita seasoning tonight and was so good! We took out the cayenne so it wasn’t too spicy for the kiddos. We are still talking about how much better seasoning made the meal! Thank you!
Hello Samantha! I’m so glad you loved the recipe. Thank you so much for letting me know. Kelly

Hello Dianne! I’m so glad you liked it! Thank you for letting me know. Kelly
This tasted great as written, but was a bit too spicy for my family’s preference. Next time I’ll cut the cayenne pepper in half and just use 1/8 tsp. Here’s a tip I use when making any of my own spice mixes: measure all the ingredients into a small (half pint) jar. Place the lid securely and shake until well mixed. Save for future use in same jar with lid or use right away. Helps cut down on dirty dishes!
Great idea Aubrey! Thanks for letting me know. Kelly
Can this fajita seasoning be use when I’m making tacos? Also, what are the other ingredients for that? Do you have a taco seasoning recipe?

I’ve been looking for a good fajita recipe and based on the reviews, I’m making this one. I’m a widow of 81 and I love fajitas and find them easy to make for one meal for myself. Thank you for this recipe. I’ll be making it tomorrow. Spicy and a little bit hot so I suspect I’ll be using all of the ingredients.
Hello Maureen! Let me know how you like it! Thank you for letting me know. – Kelly
I used Organic Cornstarch as it’s not GMO, and used Monkfruit sweetener instead of sugar and quadrupled the recipe and put it in a jar.
